Nigorizake (cloudy sake) is a type of sake made by crushing the grains of steamed rice and rice malt into small pieces and straining them through a coarse cloth.

Our “Gasshodukuri Junmai Nigori” is a nigorizake made only from rice and rice malt, without any brewing alcohol or additives.

Made from “Hidahomare,” the best rice for sake brewing in Gifu Prefecture, and rice grown in Gifu Prefecture polished to 60%, it retains the flavor of the rice, with a light acidity and a subtle sweetness that is delicately balanced in the mouth.

The yeast and enzymes in nigorizake that are not heat-treated are still alive, so it is called “active sake,” and requires careful storage and date management. However, our “Gasshodukuri Junmai Nigori” is only 1% heat-treated when it is bottled so that it can be enjoyed throughout the year.

It goes well with light Japanese cuisine as well as dishes with a rich and robust flavor.

All the rice used for this sake is “Hidahomare” grown in Gifu pref. Alcohol percentage is 19% which is higher than normal sake, but it has the good heavy taste, Umami, and rich flavor.

A ginjo aroma reminiscent of green apples makes this sake easy to drink.

Best served on the rocks or cold.

Made entirely from 60% polished Hidahomare, a Gifu Prefecture-produced rice variety that is excellent for sake-making and fermented using G yeast (Gifu Prefecture yeast) this junmai-ginjo sake has a light, dry taste.


It can be enjoyed at a broad range of temperatures from cold to hot.
